Breakfast Tacos

What’s the biggest lesson they say about relationships? Compromise. Indeed it is – especially when it’s Saturday morning, you’re both hungover and one of you has to find food. Fear not, I’ve got a recipe that will earn you brownie points, can whip with minimal fuss AND if you’re really prepared can make half of it the night before. Plus it’ll totally pull you out of that hangover slump!

Ingredients for 2 hungover people
1 x avocado
1 x lime
1 x red onion
1 x small handful of chopped coriander
200g new potatoes
Olive oil
Smoked paprika
Handful of grated mature cheddar
4 eggs
Crème fraiche
Splash of milk
Tortilla wraps

Crispy potatoes
Half or quarter depending how small your potatoes are – remember you want them in a wrap so not too big. Onto a tray then season liberally, sprinkle over a tablespoon of the paprika and a few glugs on olive oil. Roast in the oven for around 30 mins on 200c. p.s. if you’re reheating the next day do it for around 15 mins so they’re not soggy.

Mash your avocado along with the juice of the lime, a pinch of salt and the coriander. Then grate in half the red onion (juices and all) – mix well. p.s. make sure you keep the stone in the middle of your guc if you’re making it the night before, it’ll stop it going brown.

Whisk together your eggs along with a splash of milk and season. Cook in a sauce pan over a low heat then add a dollop of crème fraiche at the last minute and mix through.

Slice/dice and fry until the oil starts to come out.

Pile everything into a warm wrap and sprinkle with grated cheese. Congratulations – you are now not hungover.
