Purist Italian cooks look away now, you will not like this skinny tiramisu recipe one bit. In fact once you read it I’m sure you’ll be muttering under your breath “That recipe? That can’t even be called a tiramisu”. It’s not boozy, it doesn’t have any mascarpone and it features…an orange.
However not all of us can be blessed with a fast metabolism and a craving for green smoothies therefore the skinny tiramisu is born. I first remember having this yonks ago, it’s a recipe from Cook Yourself Thin (though I’ve adapted it a bit in the below), and haven’t thought about it in a while but gave it a bash this weekend as Bradford based indy Casa Espresso sent me some coffee to try. Pregnant ladies beware though, it does contain raw egg so you’ll have to sit this one out.
For 2 tiramisus
6 sponge fingers
60ml strong black coffee (I used Casa Espresso’s Unione Espresso blend which has a lovely chocolatey taste)
100g low fat cream cheese
75g 0% fat greek yoghurt
20g caster sugar
1/2 tbsp cocoa powder
Mix the coffee and a tablespoon of juice from the orange together. Dunk your sponge fingers in the mixture quickly and use these to line your dessert ‘vessels’. Then pour the excess liquid over them.
Beat together the cream cheese, yoghurt, sugar, egg yolk, 1 tbsp of juice from the orange and cocoa powder until smooth. In a separate bowl whisk the egg white until stiff peaks. Then fold this into the other mixture.
Add this mixture on top of the sponge fingers and put in the fridge for a few hours to set.
Finish with a layer of cocoa powder on top, some orange zest and some orange chocolate shavings if you’re feeling fancy.
